Do these words sound familiar? "Mommmm, what do we have for a snack?" Well, get ready for smiles all around! These Sunbutter Blueberry Energy Balls are packed with creamy Sunbutter, chewy oats, naturally sweet pure maple syrup, and bright pops of dried blueberries. These little bites hit that perfect sweet-snacky spot, are ready in just 10 minutes, and the kind of healthy treat that starts disappearing the moment you start making them! This super snack is also nut-free, gluten-free, vegan, no bake and comes together in one bowl!

I love them just as much, they’re the kind of snack that works for busy school days, road trips, or when you need a little something at the office to hold you over til dinner.

  • Sunbutter → the star of this recipe! You can swap with pumpkin seed butter or cashew butter, but the flavor will change.
  • Rolled oats → give these bites their chewy texture. Use certified gluten-free oats if needed.
  • Dried blueberries → sweet, chewy bursts in every bite. Dried cranberries or raisins also work. I have even done these with vegan mini chocolate chips on occasion!
  • Maple syrup → for natural sweetness. I would not sub this out as it really lends the very best flavor.

🥄How to Make Sunbutter Blueberry Energy Balls

Gather your ingredients and line a small baking sheet with parchment paper.

Sunbutter, maple syrup, cinnamon, and salt in a mixing bowl before stirring.

In a large mixing bowl add Sunbutter, maple syrup, vanilla, cinnamon, and salt.

Whisk to combine.

It should look smooth and creamy.

Whisk resting in a bowl of whipped sunbutter, maple syrup, vanilla, cinnamon, and salt mixture before adding oats.

It will be thick, this is normal.

Using a large spoon stir until everything is evenly coated in the Sunbutter mixture.

You will have a thick scoopable mixture.

I prefer a cookie scoop because it makes the job faster and less messy than rolling by hand. Fill the scoop (about 1½ Tablespoons) and pack it tight with the mixture so it will hold it's shape when released. Makes approximately 18-19 balls.

🔄Variations

  • Add a chocolate boost: Stir in mini vegan chocolate chips or drizzle the finished bites with melted dark chocolate.
  • Tropical vibes: Swap the dried blueberries for chopped dried pineapple or mango and roll the balls in shredded coconut.
  • Sweet & tangy: Use raisins, dried cranberries or dried cherries in place of blueberries for a different fruity flavor.
  • Protein power-up: Add a scoop of your favorite vegan protein powder to the base (you may need a splash more maple syrup if the mixture gets too dry).

🧊Storage & Meal Prep

  • Refrigerator: Store in an airtight container in the fridge for up to 1 week.
  • Freezer: Freeze for up to 2 months. Place them in a freezer-safe container or bag in a single layer.
  • Thawing: Set out on the counter for 15–20 minutes, or toss a few straight into a lunchbox — they’ll be perfectly chewy by lunchtime.
  • Meal prep tip: Make a double batch and keep half in the freezer so you always have grab-and-go snacks ready to go.

❓FAQ's

Do I need to chill them before eating?

Chilling helps the balls firm up and hold their shape, but you can definitely eat them right away if you don’t mind a softer texture. We eat them as we're making them!

Are these gluten-free?

Yes, as long as you use certified gluten-free oats. Regular oats may have cross-contact with gluten.

Can I use fresh or frozen blueberries instead of dried?

No. Fresh or frozen blueberries add too much moisture and will make the mixture wet and sticky and make for a very off putting color. Dried fruit is best here.

Can I make these energy balls without Sunbutter?

Sunbutter is really the star of the flavor profile here, however, cashew butter will be equally creamy. Pumpkin seed butter may also be a good nut-free alternative. Peanut butter would also work, however, we keep everything peanut free at FFF. Whichever "butter" you use just make sure it's runny.

Description

These Sunbutter Blueberry Energy Balls are the kind of healthy treat that starts disappearing the moment you start making them! They're nut-free, gluten-free, vegan, no bake and come together in one bowl!


Ingredients

Scale

1 cup Sunbutter

¼ cup pure maple syrup

2 teaspoons vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

2 cups rolled oats

½ cup dried blueberries


Instructions

  1. Mix the base.
    In a large mixing bowl, whisk together the sunbutter, maple syrup, vanilla, cinnamon, and salt until smooth and creamy.
  2. Add the oats & blueberries.
    Stir in the rolled oats and dried blueberries until everything is evenly coated in the sunbutter mixture.
  3. Scoop into balls.
    Use a small cookie scoop (about 1½ Tablespoons) to portion the mixture onto a parchment-lined baking sheet. Enjoy right away or pop them into the fridge to firm up a bit.

Gluten Free: Use certified gluten-free oats if needed.
Sunbutter alternative: Cashew butter or pumpkin seed butter can be swapped for Sunbutter, make sure it's runny and note that these will change the flavor profile. We don't use Peanut Buter at FFF, but if you don't manage nut allergies you can definitely use PB if you like!

    I made these and it only took a few minutes. I popped them in the fridge and I like them better when they are chilled a little.
    I brought them to work and everyone loved them not knowing they were gluten free and vegan! Now they want more!
