- Sunbutter → the star of this recipe! You can swap with pumpkin seed butter or cashew butter, but the flavor will change.
- Rolled oats → give these bites their chewy texture. Use certified gluten-free oats if needed.
- Dried blueberries → sweet, chewy bursts in every bite. Dried cranberries or raisins also work. I have even done these with vegan mini chocolate chips on occasion!
- Maple syrup → for natural sweetness. I would not sub this out as it really lends the very best flavor.
🥄How to Make Sunbutter Blueberry Energy Balls

Gather your ingredients and line a small baking sheet with parchment paper.

In a large mixing bowl add Sunbutter, maple syrup, vanilla, cinnamon, and salt.

Whisk to combine.

It should look smooth and creamy.

It will be thick, this is normal.

Add the rolled oats and dried blueberries to the bowl.

Using a large spoon stir until everything is evenly coated in the Sunbutter mixture.

You will have a thick scoopable mixture.

I prefer a cookie scoop because it makes the job faster and less messy than rolling by hand. Fill the scoop (about 1½ Tablespoons) and pack it tight with the mixture so it will hold it's shape when released. Makes approximately 18-19 balls.

- Add a chocolate boost: Stir in mini vegan chocolate chips or drizzle the finished bites with melted dark chocolate.
- Tropical vibes: Swap the dried blueberries for chopped dried pineapple or mango and roll the balls in shredded coconut.

Chilling helps the balls firm up and hold their shape, but you can definitely eat them right away if you don’t mind a softer texture. We eat them as we're making them!
Yes, as long as you use certified gluten-free oats. Regular oats may have cross-contact with gluten.
No. Fresh or frozen blueberries add too much moisture and will make the mixture wet and sticky and make for a very off putting color. Dried fruit is best here.
Sunbutter is really the star of the flavor profile here, however, cashew butter will be equally creamy. Pumpkin seed butter may also be a good nut-free alternative. Peanut butter would also work, however, we keep everything peanut free at FFF. Whichever "butter" you use just make sure it's runny.

Ingredients
1 cup Sunbutter
¼ cup pure maple syrup
2 teaspoons vanilla extract

2 cups rolled oats
½ cup dried blueberries
Instructions
- Mix the base.
In a large mixing bowl, whisk together the sunbutter, maple syrup, vanilla, cinnamon, and salt until smooth and creamy. - Add the oats & blueberries.
Stir in the rolled oats and dried blueberries until everything is evenly coated in the sunbutter mixture. - Scoop into balls.
Use a small cookie scoop (about 1½ Tablespoons) to portion the mixture onto a parchment-lined baking sheet. Enjoy right away or pop them into the fridge to firm up a bit.

I made these and it only took a few minutes. I popped them in the fridge and I like them better when they are chilled a little.
