Sunbutter Blueberry Energy Balls

Description

These Sunbutter Blueberry Energy Balls are the kind of healthy treat that starts disappearing the moment you start making them! They're nut-free, gluten-free, vegan, no bake and come together in one bowl!


Ingredients

Scale

1 cup Sunbutter

1/4 cup pure maple syrup

2 teaspoons vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 cups rolled oats

1/2 cup dried blueberries


Instructions

  1. Mix the base.
    In a large mixing bowl, whisk together the sunbutter, maple syrup, vanilla, cinnamon, and salt until smooth and creamy.
  2. Add the oats & blueberries.
    Stir in the rolled oats and dried blueberries until everything is evenly coated in the sunbutter mixture.
  3. Scoop into balls.
    Use a small cookie scoop (about 1½ Tablespoons) to portion the mixture onto a parchment-lined baking sheet. Enjoy right away or pop them into the fridge to firm up a bit.

Notes

Gluten Free: Use certified gluten-free oats if needed.
Sunbutter alternative: Cashew butter or pumpkin seed butter can be swapped for Sunbutter, make sure it's runny and note that these will change the flavor profile. We don't use Peanut Buter at FFF, but if you don't manage nut allergies you can definitely use PB if you like!
Storage: Keep these snacks in the fridge for up to 1 week, or freeze up to 2 months.
