These no bake chocolate oatmeal cookies are vegan, dairy free and gluten free. Loaded with hearty oats, velvety cocoa, creamy nut butter, maple syrup, coconut sugar, and a splash of vanilla. Chewy, chocolatey clusters that come together quickly without turning on the oven. They are fudgy, sticky, sweet and will definitely win over a crowd!

  • Cashew Butter – I love Artisana because it’s smooth and creamy, so it blends right in to the other ingredients nicely with a whisk. If yours is on the firmer side, you can gently warm it in a sauce pan on low with the other ingredients before adding oats. We’re a peanut-allergy family, but if that’s not a concern, creamy peanut butter or almond butter will also work.
  • Maple Syrup – Adds natural sweetness and depth of flavor. Bonus: it keeps the cookies chewy instead of dry. No sub here, its flavor is key!
  • Cocoa Powder – If it’s clumpy, sift it in with a handheld strainer or sifter. This makes sure your cookies are silky smooth with no bitter cocoa lumps hiding in the mix.
  • Plant Milk – Just a splash helps everything come together. Any unsweetened variety works here (oat, almond, soy, cashew).
  • Oats – Old-fashioned rolled oats give these no bake vegan chocolate oatmeal cookies that classic chewy bite. Quick oats can work in a pinch, but they’ll make the texture a little softer. Use GF if needed.
  • Vanilla – Boosts the chocolatey flavor and gives the cookies that cozy, dessert like aroma.

Step 2.) Add cashew butter, plant milk, maple syrup, cocoa powder, salt, and vanilla to a medium mixing bowl. (Use a large bowl if doubling the batch).

Step 3.) Add oats to the wet mixture.

Step 4.) Use a cookie scoop to portion the batter into balls.

Step 5.) Press each ball gently with a fork until about ½ inch thick.

💡Pro Tip for No Bake Cookie Success

Quick set hack – Pop the tray in the fridge for about 25-30 minutes, or the freezer for 10–15 if you can’t wait that long.

Cashew butter matters – I love using Artisana because it’s super smooth and whisks right in. If your cashew butter is stiff, just warm it with the other ingredients in a saucepan on low heat before stirring in the oats. Easy peasy.

🧊 Storage & Meal Prep

Fridge: Store these chewy vegan chocolate oatmeal cookies in an airtight container in the refrigerator for up to 1 week.

Freezer: Freeze in a single layer (or with parchment between layers) in an airtight container or ziplock bag. They keep beautifully for up to 2 months.

Thawing: No need to wait long, they thaw in just a few minutes (sometimes faster), so you can grab and enjoy anytime.

Absolutely! Just be sure to use certified gluten-free oats. The rest of the ingredients (cashew butter, cocoa, maple syrup, etc.) are naturally gluten free.

Why are my no bake cookies not setting?

While these cookies remain chewy and sticky they shouldn't fall apart when you pick them up. If that's the case try refrigerating longer or moving them to the freezer to set up.

Can I make these no bake Vegan Chocolate Oatmeal Cookies with Almond Milk?

Sure can! Any plant milk you have on hand will work including Soy, Cashew, Almond, and Oat. I did not test this recipe using canned coconut milk though.

Can I use peanut butter to make these Vegan Chocolate Oatmeal Cookies?

You definitely can! We are a peanut allergy family, however, if that is not an issue for you then peanut butter will provide an equally delicious and more budget friendly option.

My Chewy Chocolate Oatmeal Refrigerator Cookies are the ultimate no bake treat! Ready in just 30 minutes . These vegan treats are fudgy, sticky, sweet and will definitely win over a crowd!


Ingredients

Scale

½ cup cashew butter

⅓ cup maple syrup

¼ cup plant milk

¼ cup cocoa powder

2 teaspoons vanilla

¼ teaspoon salt

2 cups rolled oats (quick oats can be used, however, rolled oats provide the chewiness).

  1. Gather your ingredients and line a cookie sheet with parchment or wax paper.
  2. Add cashew butter, plant milk, maple syrup, cocoa powder, salt, and vanilla to a medium mixing bowl. (Use a large bowl if doubling the batch). Whisk ingredients together until smooth.

It was warm today so I had to work quickly.

What really happened

I was measuring out all of my ingredients when out of the corner of my eye I saw a little brown and very energetic fruit fly zoom right into my Maple Syrup like he was an Olympic grade Peregrine Falcon. You know what blends in perfectly with brown maple syrup? A brown fruit fly 🤢. Imagine if I hadn't caught him in the act? 🤢🤢🤢 Cookies anyone?
