These Triple Berry No Bake Chewy Granola Bars are nut-free, packed with plenty of oats, seeds and dried fruit, take about 10 minutes to throw together and the fridge does the rest. No baking. No food processor. One bowl. Zero mess.

You know those little snacks you get on an airplane, usually some plain almonds or a package of 7 or 8 tiny pretzels? On our most recent Delta flight, I noticed an 88 Acres Triple Berry Crumble Bar staring at me from the treat box and felt like I hit the airplane snack jackpot!
I saved that wrapper for months determined to come up with my own version that I could incorporate into Justin's lunchbox. And the final outcome did not disappoint!
This isn't just another, "Hey, that's a pretty darn good granola bar". This is the kind of granola bar where you eat one and immediately start contemplating how bad would it really be to eat a second one...especially if no one's around to see you. These turned out even better than I'd hoped. Chewy, fruity, sweet & salty, basically everything you crave in a granola bar.

🫐 Ingredients & Helpful Substitutions
For the full list and measurements, see the recipe card below. Here are the main ingredients and easy swaps.
- Rolled oats: I used extra-thick rolled oats, but regular rolled or quick oats work too. For gluten-free granola bars, use certified gluten-free oats and double-check the labels on your other ingredients to ensure they're gluten-free too.
- Sunflower seeds & pepitas: You can also sub with Hemp seeds or, if you're not avoiding nuts, slivered almonds or chopped pistachios would also taste great.
- Ground flax: Helps absorb moisture and bind the bars together. Don’t skip it!
- Dried berries: Raisins, blueberries and cranberries add chewy texture and plenty of fruity sweetness. Feel free to experiment with dried cherries, or even Goji berries too!
- Unsweetened coconut: Shredded or flaked coconut both work.
- SunButter: Keeps the bars nut-free. If nuts aren’t a concern, almond or cashew butter work great too. I tested both and the bars firmed up just a bit more too.
- Maple syrup & brown rice syrup: Be sure not to substitute these, you need both, or the bars won't hold together.
🥣 How To Make These Chewy Granola Bars

Gather your ingredients
Round up everything you need, including a large mixing bowl and a large spoon, and line an 8x8-inch baking dish with parchment paper.

Add the dry ingredients.
Add the oats, ground flax, pepitas and sunflower seeds to a large mixing bowl.

Add the fruit and coconut.
Add the coconut, raisins, dried cranberries and dried blueberries, followed by the cinnamon and salt.

Mix it together.
Stir until the oats, seeds and dried fruit are evenly combined.

Add the wet ingredients.
Add the SunButter, maple syrup and brown rice syrup to the bowl.

Stir until thick and sticky.
Mix well until everything is completely coated.

Pour into the dish.
Transfer the mixture to a parchment-lined 8x8-inch baking dish. Spread it evenly and press it into the corners.

Add a parchment cover.
Add a sheet of parchment the size of your dish to cover the top of the bars.
This doubles for pressing them down and covering them while they chill.

Pack it down firmly.
Use the flat bottom of a small container, jar or measuring cup to firmly compact the mixture. Really press it down! This helps the bars hold together once chilled.

Chill until firm.
Refrigerate 6 hours or overnight for the firmest, chewiest bars. You can enjoy them sooner, but they'll be softer and more delicate.
Once chilled, remove and discard the parchment.

Grab a large knife.
Lift the chilled mixture from the dish and set on a cutting board or flat surface for slicing.

Cut into bars.
You'll end up with eight 2 inch by 4 inch bars. Perfect for snacking!

🙊The Secret to Chewy Granola Bars
Really Pack Them Down
Don't be shy here! Cover the mixture with parchment and use the bottom of a jar, container or measuring cup to press it firmly into the pan. The tighter you pack it, the better the bars will hold together.
Don't Substitute the Brown Rice Syrup
I tested these with all maple syrup and they tasted great, but completely fell apart. Thick, sticky brown rice syrup is key to that chewy, hold-together texture.
Give Them Time to Chill
Six hours works, but overnight is even better. The oats and flax absorb moisture as they chill, helping the bars become firmer and perfectly chewy.
🧊 Storage & Meal Prep Tips
- Refrigerator: Store the bars in an airtight container in the refrigerator for up to 2 weeks. They will soften a bit at room temperature, so keeping them chilled is best.
- Grab & go: I like to place each bar in its own snack-size bag so they're ready to toss into a lunchbox or grab on the way out the door.
- Freezer: Freeze the individually wrapped bars in a freezer-safe container or bag. They thaw in just a few minutes, making them perfect for meal prep.
- Lunchboxes: Pop a chilled or frozen bar into a lunchbox in the morning. It'll soften as it sits and be ready to enjoy by snack or lunchtime.
❓ FAQ's
There are two big secrets: don't skip the ground flax or substitute the brown rice syrup, and really pack that mixture into the pan. I place parchment over the top and use the bottom of a small container or measuring cup to press it down firmly. Chilling overnight also gives the flax and oats time to absorb moisture and really helps the bars firm up.
I don't recommend it. I tested a batch using all maple syrup and while they tasted delicious, they fell apart immediately. The thick, sticky brown rice syrup is an important part of what helps hold these bars together.
Absolutely! Freeze them individually wrapped in a freezer-safe container or bag. They thaw in just a few minutes. You can also pop them in a lunch box straight from the freezer.
Yes! They're made with SunButter, sunflower seeds and pepitas instead of nuts. Always check individual ingredient labels if you're serving someone with an allergy.

👩🏻🍳Creating the shot: A behind the scenes look

Quality control arrived early.
I can't seem to do anything around here without good old Charlie nosing in.

Apparently I was taking too long.
20 photos of the same two Granola bars. I'm pretty sure he was hoping I'd walk away just long enough for him to sneak a sniff.
What Really Happened
Recipe testing for these meant we ate a LOT of granola bars around here. My first two batches completely fell apart. But since they still tasted delicious, the kiddo and I did what any responsible recipe testers would do, we grabbed forks and ate them anyway. 😂
Batch after batch, I kept tweaking this and that until I finally got that perfectly chewy, hold-together texture just right. Justin and I have probably eaten our weight in granola bars at this point. No complaints here though!
Hope you love these as much as we do! Hint: You'll want to make a double batch. 😉
