These Crispy Smoky Parmesan Cauliflower Bites have golden, crisp tops, soft tender centers and a touch of savory cheesy flavor in every bite. They’re made with frozen riced cauliflower, vegan Parmesan, crunchy panko and smoked paprika, then baked or air fried until deeply golden. 💗 Why You'll Love These Crispy Cauliflower Bites

  • Crispy without the oil. These cauliflower bites bake or air fry until beautifully golden and crisp with no added oil needed.
  • Simple ingredients, big flavor. Vegan Parmesan, nutritional yeast, and smoked paprika add a delicious savory flavor with just a hint of cheesiness.
  • Perfect little savory snacks. Delicious straight from the oven or air fryer, whether you're serving them as a game day appetizer, side dish, or afternoon snack.

🧄Ingredients & Helpful Substitutions

For the full list and measurements, see the recipe card below. Here are the main ingredients and easy swaps.

  • Frozen riced cauliflower: Use two 10-ounce bags and thaw completely. Do not drain or squeeze it. The little bit of liquid in the thawed cauliflower helps provide the moisture needed to hold the mixture together.
  • Panko breadcrumbs: Give the bites structure and help create that crisp exterior. Use gluten-free panko if needed.
  • Vegan Parmesan: Adds salty, savory Parmesan flavor. Store bought works or throw together this 5-Minute Vegan Parmesan, all you need is a bowl and a spoon to make it.
  • Ground flaxseed: Important binder. Once everything rests for 10 minutes, the flax absorbs moisture and helps the scoops hold together.
  • Nutritional yeast: Adds a slight cheesy flavor. You could swap for vegan cheese shreds if you prefer.
  • Smoked paprika: This gives the bites that smoky flavor and beautiful color. You can swap with regular paprika if you don't want the smokiness.
  • Plant milk: Brings the mixture together. Use unsweetened, unflavored plant milk. Cashew, Oat, Almond, or Soy all work.

⏲️Advanced Prep

Thaw ahead: Set the frozen cauliflower on the counter about 2 to 3 hours before you plan to cook, or better yet, place it in the refrigerator the night before. Make sure it is completely thawed before starting your recipe, it should feel soft, not like little balls of ice.

🥣How to Make Cauliflower Bites

Ingredients for homemade cauliflower bites arranged on a blue tiled surface, including frozen riced cauliflower, seasonings, and plant milk.

These little snacks come together in one bowl! The trick is making sure your cauliflower is completely thawed and giving the mixture time to rest before scooping. So, gather up all your ingredients and let's go!

A large spoon resting in a mixing bowl filled with cauliflower and seasonings before stirring.

Add your Cauliflower and dry ingredients to a large mixing bowl.
Everything goes into one bowl, keeping prep simple and cleanup to a minimum! Add all of the dry ingredients and stir to combine.

Plant milk being poured into a bowl of seasoned cauliflower mixture.

Pour in the liquid.
Plant milk helps bring the cauliflower and dry ingredients together perfectly.

A moist, seasoned cauliflower mixture stirred together in an orange mixing bowl.

Mix everything until well combined.
Stir until the ingredients are evenly distributed and the mixture is thoroughly moistened.

Then set the bowl aside for 10 minutes.
This gives the dry ingredients time to absorb the moisture and helps the bites hold their shape.

Look for this thick sticky texture.
The mixture should be moist enough to hold together when packed into a scoop, but not overly wet or mushy.

Pack the mixture firmly into a cookie scoop.
Press it in tightly to create compact, evenly sized bites that won't fall apart.

Scoop onto a parchment-lined baking sheet.
Release each scoop gently onto the parchment, keeping the rounded shape intact. Place the balls about 1 inch apart so they can cook evenly.

Sixteen uncooked cauliflower bites arranged in four rows on a parchment-lined baking tray.

Continue scooping until all the mixture is used.
You will end up with about 30 cauliflower bites.

Smoked paprika being sprinkled over uncooked cauliflower bites before air frying.

Sprinkle the tops with smoked paprika.
Just a little bit adds smoky flavor and gives the bites their beautiful golden color.

Cook until golden brown and crispy.
The outsides should be nicely browned and crisp while the centers stay tender.

🔥 Cooking Your Cauliflower Bites

Oven Instructions

Preheat your oven to 375°F.
Once your cauliflower bites are scooped and seasoned, bake for 35 minutes until golden brown and crispy on the outside.

Air Fryer Instructions

Preheat your air fryer to 360°F.
Arrange the cauliflower bites in a single layer onto a parchment lined air fryer tray, leaving space between them for air to circulate. Cook for 13 minutes until golden brown and crispy.

Three air-fried cauliflower bites showing different browning levels after 10, 12, and 13 minutes.

13 minutes was the perfect amount of time when I was testing this recipe. It also provided the deepest savory flavor vs the shorter cooking times, and the crisp on the tops was perfect.

🙊The Secret to Perfect Cauliflower Bites

Completely Thaw the Cauliflower

Make sure your riced cauliflower is completely thawed before mixing. If it's still partially frozen, the bites won't hold together when scooped.

Let the Mixture Rest

Give the mixture 10 minutes to rest before scooping. This gives the flax time to absorb moisture so the bites hold together really well without falling apart.

Don't Drain the Cauliflower

A little water in the thawed cauliflower is a good thing! Don't drain or squeeze it. That moisture helps bind the mixture and keeps the centers tender. And we all get to skip a daunting and messy step!

Let Them Get Deeply Golden

Color equals flavor. I tested the air-fried bites at 10, 12 and 13 minutes, and 13 was the clear winner. The flavor was noticeably more prominent. For either cooking method, let the tops get deeply golden for the best flavor and crispiness.

🧊 Storage & Meal Prep Tips

Storage: Let the cauliflower bites cool completely before transferring them to an airtight container. Refrigerate for up to 3–4 days.

Reheating: Warm them in the oven or air fryer until heated through to help bring back that crispy exterior. The microwave works in a pinch, but they'll be softer.

Meal Prep: Prepare the mixture ahead of time, scoop onto a baking sheet and cover in the fridge until ready to bake. Or cook a batch and refrigerate the finished bites for easy re-heatable snacks throughout the week.

❓ FAQs

Why are my cauliflower bites falling apart?

Make sure your riced cauliflower is completely thawed and let the mixture rest for 10 minutes before scooping. Pack the mixture firmly into your cookie scoop.

Can I use fresh cauliflower instead of frozen riced cauliflower?

I developed this recipe using frozen riced cauliflower, so that's what I recommend for the best results. Fresh cauliflower will have a different moisture content and texture, so I can't guarantee it will hold together the same way, or at all.

Can I freeze these Cauliflower Bites?

I haven't tested freezing them yet, so I can't promise they'll maintain their texture after thawing. Since these bites are naturally tender and a little delicate, I'd recommend enjoying them fresh or refrigerating leftovers instead.

Description

These Crispy Vegan Cauliflower Bites are made with frozen riced cauliflower, savory seasonings, and a hint of smoky Parmesan flavor. Lightly crisp on the outside, tender inside, and made without oil! Bake them in the oven or air fryer for an easy vegan snack, appetizer, or side dish.

Ingredients

Units Scale
  • 2 (10-ounce) bags frozen riced cauliflower, completely thawed (do not drain)
  • ½ cup panko breadcrumbs
  • ½ cup vegan Parmesan cheese
  • ⅓ cup ground flaxseed
  • ⅓ cup nutritional yeast
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika, plus extra for sprinkling
  • ½ teaspoon garlic powder
  • ¼ cup unsweetened plant milk, plus 1 Tablespoon if needed

Instructions

  1. Combine the ingredients. Add the completely thawed riced cauliflower, panko breadcrumbs, vegan Parmesan, ground flaxseed, nutritional yeast, onion powder, smoked paprika, garlic powder, and salt to a large mixing bowl. Stir until evenly combined.
  2. Add the plant milk. Pour in ¼ cup of plant milk and mix thoroughly. The mixture should be moist and slightly crumbly but hold together when firmly packed. If it's too dry, add another Tablespoon of plant milk.
  3. Let it rest. Allow the mixture to sit for 10 minutes so the dry ingredients can absorb the moisture and help bind everything together.
  4. Scoop the bites. Using a small cookie scoop, firmly pack the mixture and release each scoop onto a parchment-lined baking sheet. You should have approximately 30 bites.
  5. Add the finishing touch. Lightly sprinkle the tops with additional smoked paprika.
  6. Oven method: Preheat the oven to 375°F. Bake for 32–35 minutes, until the bites are a deep golden brown and lightly crisp on the outside.
  7. Air fryer method: Preheat the air fryer to 360°F. Arrange the bites on a parchment lined air fryer tray, in a single layer, leaving approximately 1 inch between them to allow air to circulate and ensure crispy edges. Air fry for 13 minutes, until golden brown. No flipping necessary. Depending on the size of your air fryer you may need to make multiple batches to avoid crowding.
  8. Serve warm. Carefully remove the bites and serve while they're still warm and lightly crisp. Serve warm on their own or with vegan ranch drizzled over the top!

Notes

Thaw completely: The riced cauliflower must be completely thawed before mixing or the bites may fall apart when scooped. Do not drain.
Pack firmly: Press the mixture tightly into your cookie scoop to help the bites hold their shape.
Don't skip the rest: Those 10 minutes help the ingredients absorb moisture and bind together.
Best served fresh: The bites have a lightly crisp exterior and tender center. They soften after refrigeration, so reheat in the oven or air fryer to restore some crispness.

What Really Happened:

I had already eaten five of these straight from the pan and finally had to cut myself off because I still needed to take the final pictures. Then Justin got home from school and spotted the plate of remaining “cauliflower bombs,” as he calls them, sitting on the kitchen counter.

He grabbed a small plate and took three. Two minutes later, I hear, “Mom, these are really good, and seasoned really well,” as he makes his way back into the kitchen for just three more.

About five minutes after that, I see him walking out of the kitchen carrying the ENTIRE plate.

“You don’t want any more of these, do you?” he asks rhetorically, because he was walking away not waiting for an answer.

And in true teenage-boy fashion, he ate the remaining 16 bites and the whole batch was gone. 😂

I’m thinking that counts as a successful recipe test.
