Most call for grinding up cashews or other nuts in a blender or food processor which doesn't really provide that light, fluffy, melt in your mouth feel I was looking for. I wanted something to replicate that familiar green container most of us grew up pouring all over our spaghetti...but healthy.
I also needed it to be simple enough for my kiddo to make by himself because he eats it like it's the last food on earth and I find we are making this often. Often is probably still an understatement, he'd put it on his pancakes if I let him. Our prize ingredient here is Almond Flour for creating a fool proof, perfect consistency every time.

For an easy trick to pour this vegan parmesan into a jar for storage, I like to use a sheet of clean paper as a funnel for easier pouring without the mess.

- For a nut free version the best alternative I've found is Hemp seed, also called Hemp hearts. They are small and light and have a very mild nutty flavor that goes well with the other ingredients.
- If you are in a pinch and find you are out of Italian Seasoning you can use other herbs without sacrificing flavor. Try 1 teaspoon each of any two of the following dried herbs: Oregano, Thyme, Basil, Marjoram, or Parsley. For example, 1 teaspoon Oregano and 1 teaspoon Thyme to replace the 2 teaspoons of Italian Seasoning.

👩🏻🍳Creating the Shot: A Behind-the-Scenes Look
What really happened
I set up the ingredients on a backdrop on the floor and three shots in my camera battery died. Next 30 minutes was me waiting for the battery to charge while making sure our curious cat Charlie did not sneak in and eat the ingredients. He tired, multiple times.
Then I set up the feature shot on the table, went to move the spoon and bumped the jar behind it causing some parmesan to fly out of the bowl. The mess you see on the cutting board and behind the bowl was actually not planned, but I wasn't about to move everything to clean and start over, so I just went with it haha!
After the photoshoot was complete we all happily ate a bunch of really delicious Garlic bread, except Chris, he dropped his on the floor.
