Roasted BBQ Cauliflower Wraps

Description

These Roasted BBQ Cauliflower Wraps are my go to weeknight dinner solution when I don't have the energy to focus on fixing dinner. Sweet, smoky, barbecuey and the oven does 90% of the work!


Ingredients

Scale

2 16 ounce bags frozen cauliflower florets

3 Tablespoons BBQ Seasoning (I used Rib Rack for their clean ingredients, but use your favorite or see my notes to quickly make your own)

1-2 Avocado(s) peeled and mashed with a squeeze of lime juice to prevent browning, sliced works too

1-2 large tomatoes diced

8 tortilla wraps, use Gluten-Free if needed

Plant-based Ranch dressing for topping, or make my quick and easy dairy free ranch

BBQ Sauce for topping, I used Rib Rack Original for their clean ingredients, but use your favorite!


Instructions

  1. Preheat oven to 400°F (200°C) and gather your ingredients.

  2. Toss the frozen cauliflower with 3 tbsp BBQ seasoning in a large mixing bowl (see notes for homemade BBQ seasoning).

  3. Spread cauliflower evenly on a parchment-lined baking sheet and bake for 40 minutes (no need to check).

  4. While the cauliflower bakes, dice the tomato and mash (or slice) the avocado with a squeeze of lime juice to prevent browning.

  5. If making your own ranch dressing, do that now. If using store bought skip to step 6.

  6. Set up a build-your-own wrap station with the tomatoes, avocado, ranch, BBQ sauce, and wraps.

  7. When cauliflower is done, remove from the oven and let cool for about 5 minutes. Using a large knife chop into smaller pieces (I used a bench scraper for easy chopping). If you want warm wraps, place them on a baking sheet and pop them into the warm oven for 2-3 minutes.

  8. Assemble and serve!

Notes

BBQ Seasoning: To make your own combine 2 tablespoons coconut sugar (or brown sugar), 2 tablespoons smoked paprika, ¼ tablespoon chili powder, ¼ tablespoon garlic powder, ¼ tablespoon onion powder, ¼ tablespoon salt.
Variations: Consider adding black beans for extra protein, shredded lettuce or purple cabbage for crunch, or vegan cheese for added flavor. You could even toss in some Vegan Bacon Bits or plant-based chicken. The wraps are versatile and can be customized to your taste.
